To create Light Crystal, we increase the temperature, the endosperm darkens, and the flavor further develops. Think of Crystal Malts as if you were making caramel at home. The present crystalline sugars in Light Crystal provide an intense caramel flavor. Light Crystal also gives the beer a reddish hue and works very well in Bitters and Ruby beers.
The number after the word Crystal refers to the EBC color of the malt if you have mashed 100% of the grain.
