Dextrin malt is produced by shortening the germination phase, which allows for the preservation of higher molecular weight polysaccharides. These polysaccharides contribute to a fuller body and richer flavor in the beer while also supporting foam formation.
This type of malt is particularly suitable for brewing golden beers or pilsner-type beers in combination with well-modified Extra Pale Malt. Due to its low color, dextrin malt can be used up to 15% without affecting the color of the final beer. It is also useful in producing lower gravity beers, such as IPAs, where it helps achieve a fuller body similar to higher gravity beers.
