BEST Acidulated Malt is used to optimize pH when the water used for mashing is of insufficient quality. This leads to increased enzymatic activity during mashing, resulting in higher yields and improved flavor stability. The malt also produces a lighter color in the wort and balances the beer's taste.
Information about the amount used and its effect on pH during mashing must be determined through preliminary tests. The pH value of the wort and beer generally does not decrease, as improved starch conversion leads to the formation of more blocking substances.
