With Medium Crystal, the intense caramel flavors of rich molasses caramel are developed. To achieve these flavors, the temperature is raised one more degree from Light Crystal, sugars darken further, and the beer takes on a deep copper hue. Remember that Crystal Malts do not have preserved enzymes or FAN, so be cautious with the rate of addition. You want to add enough to achieve the desired depth of flavor, but not so much that you encounter fermentation issues due to a lack of nutrients.
