Crystal 400 is a dark crystal malt that has the highest degree of caramelization. The flavor shifts to raisins, plums, and dark dried fruits. Sugars are broken down through chemical processes, resulting in the residual sweetness provided by other crystal malts being replaced by an increase in bitterness. The sugars in crystal malt are non-fermentable, so add an amount of dextrin sugars that will remain preserved in the final beer.
