Chocolate malt, also known as Coffee malt, shares many characteristics with black malt, but because it is roasted for a shorter time and at a lower final temperature, it lacks the astringency of black malt. Its primary use is in darker beers. Chocolate (coffee) malt has been used in Irish stout for years, and the combination of chocolate (coffee) malt and roasted barley in various proportions can give rise to a range of flavors from sweet and mild to sharp and bitter.
