BEST Chit Malt (unroasted) is used occasionally or often during mashing, making it unique among other types of specialty malts. This lightly malted barley is characterized by a very high content of high molecular weight proteins compared to Pilsen malt, making it suitable for compensating for highly malted malts and improving foam quality.
The malt has an especially high level of inherent starting enzymes that significantly contribute to improving starch conversion, thereby increasing yield. Due to its pale color, BEST Chit Malt (unroasted) does not impart any color to the beer. BEST Chit Malt (unroasted) meets the regulations according to the German purity law "Reinheitsgebot".
