WildBrew Philly Sour™ is a unique strain of Lachancea that was selected from nature at the University of Science in Philadelphia, PA, USA.
Philly Sour produces not only ethanol but also a mild amount of lactic acid in a single fermentation step. This first yeast strain from the WildBrew® series is an excellent choice for innovative sour beers with refreshing acidity and stone fruit notes. With its high attenuation, high flocculation, and good foam retention, WildBrew Philly Sour™ is the ideal yeast for traditional styles such as Berliner Weiss, Gose, American Lambic Style, American Wild Ales, and, thanks to its resistance to hopping, it's also great for Sour IPA.
