WildBrew Philly Sour™ is a unique strain of Lachancea, selected from nature at the University of Sciences in Philadelphia, PA, USA.
Philly Sour produces, in addition to ethanol, a small amount of lactic acid in a single fermentation step. This first yeast from the WildBrew® series is an excellent choice for innovative sour beers with refreshing acidity and stone fruit notes. With high attenuation, high flocculation, and good foam retention, WildBrew Philly Sour™ is the ideal yeast for traditional styles such as Berliner Weiss, Gose, American Lambic Style, American Wild Ales, and due to its resistance to hopping, it is also perfect for Sour IPA.
