LalBrew CBC-1™ Yeast for Secondary Fermentation
CBC stands for "secondary fermentation in casks or bottles," and CBC-1 is the first yeast specifically selected for this purpose. Due to its high alcohol tolerance, it is capable of fermenting beers with alcohol content up to 14% ABV. It does not produce aromatic compounds, preserving the original character of the beer. It can also be used for primary fermentation to create unique fruity beers or sparkling beers.
LalBrew CBC-1™ was specifically selected from the yeast culture collection for its properties and is recommended for use in casks and bottles. LalBrew CBC-1™ ferments very efficiently due to its high tolerance to alcohol and pressure. The flavor is neutral, preserving the original character of the beverage. LalBrew CBC-1™ can be used for primary fermentation of dry worts or meads. Maltotriose is not metabolized during primary fermentation, making LalBrew CBC-1™ ideal for sweeter fruit beers, full-bodied malt beers, meads, and ciders.
