Clarizyme™ simplifies and shortens the beer aging process, reduces your energy costs, and lowers your carbon footprint. Clarizyme™ is a highly specific self-cloning enzyme that targets haze-sensitive polypeptides at the carboxyl end of the proline amino acid, preventing cold haze formation in beer without affecting other aspects of beer quality, particularly foam. It contains a specific fungal enzyme, endopeptidase, which breaks down haze-sensitive polypeptides, inhibiting precipitation with polyphenols. The same process also breaks down gluten into peptides, reducing its content to undetectable levels.
Using Clarizyme™ can reduce gluten content and stabilize haze without impacting the flavor, aroma, body, or mouthfeel of your beer.
