Product detailed description

ABV AROMAZYME is an enzyme preparation with strong glycosidase activity derived from a selected strain of Aspergillus niger. It consists of β-glucosidase enzymes capable of hydrolyzing glycosidic bonds, releasing monoterpene alcohol compounds and glucose. It was developed to enhance the complexity of hop aroma and flavor profile in beer. Application of ABV AROMAZYME during fermentation provides the opportunity to improve hop utilization by releasing additional volatile aromatic compounds, thereby reducing the overall amount of hops used or allowing the use of less sophisticated hop varieties.

Increases the diversity of hop flavors and aromas by altering the ratio of specific terpene compounds
Improves beer flavor and drinkability by reducing unpleasant harsh bitterness
Mildly supports fermentation of wort
Enhances hop flavor and aroma in less aromatic hop varieties

Dosage:
  • Recommended dosage is 5 g/hl
  • Optimal pH is 3.5 - 6.5
  • Optimal temperature 15 - 65°C
  • Mix the enzyme in an optimal amount of water or wort (1g/10 ml) to ensure even dissolution and pour into the fermenter.
